What is SNF in milk?
Solids-Not-Fat — everything solid in the milk except the cream. Protein, lactose and minerals together.
SNF stands for Solids-Not-Fat. It is protein, lactose and minerals added together, written as a percentage — typically between 8 and 9.5 in normal milk.
It matters because fat alone can be misleading. Milk with water added loses SNF quickly, so a low SNF against a normal fat is one of the oldest signs a dairy checks.
In the 52/48 formula, SNF carries 48 parts of the price against a standard of 9.0. In the 60/40 formula it carries 40 parts against a standard of 8.5. In the 100/0 formula it is not measured at all, and Dairywala hides the SNF box entirely for those members.
